I love the idea of a taco casserole, especially for a quick weeknight meal. I also love that it can be easily adapted for a vegetarian lifestyle-just omit the beef or use a meat alternative. How fun would this be for Taco Tuesday and without the fussiness of individual tacos. I would probably cut out the corn chip topping on my fianc's half since he watches his salt intake a bit more than I do. Thanks for sharing. Will add this to my recipe box and try it soon.
