    I have been looking for more recipes to make using my slow cooker and this looks fantastic! Almost easy enough to bring to a potluck or a party for everyone to enjoy!

    This dish is everything I love, easy to prepare, easy to clean up, a kid favorite and easily customizable. I'll add black beans for enhanced nutrition and maybe some frozen corn for color. This would be great with chips and guacamole on the side. I'll be trying this one this week for sure!

    So extremely simple, and so quick! Great for a busy weeknight meal or afternoon snack! This would be awesome scooped into some warmed tortillas as a meal, or as a big pan of dip for a crowd. A great thing to have on hand and prep ahead of time for a casual gathering or an impromptu visit when you don't have much time to cook!

    Thank you for such a wonderful and easy recipe, We love chicken enchiladas and this makes a nice big pot (crockpot) of it. I'll have the traditional side dishes, refried beans and rice, and lots of toppings (lettuce, tomatoes, sour cream, guacamole, and jalapenos). Can't wait to make this!
