I like this. I've always liked tortellini and this is a nice combination to make a dish very reminiscent of chicken enchiladas, which is also something I enjoy. The link to the enchilada sauce the author uses (El Rio Enchilada Sauce) indicates it's been discontinued. A Google search, though, seems to indicate it's still on the market. I used the El Paso brand and it turned out well. Next time, I might try this with the green enchilada sauce rather than the red.
