I love that a dough crust is used in this casserole, as opposed to rice mixed into the dish or a biscuit on top. It makes it so much easier to portion out and serve, and you could even eat it with your hands. I love a bed of lettuce for all things Mexican - I do that a lot when I'm wet burritos and enchiladas!
