Easy and cheesy are my favorite type of recipes. I am always on the lookout for new and delicious Mexican style recipes and foods. This looks yummy especially with the addition of the avocado and black olives. Love the combo of those two items. I will try the recipe as is but in the future will experiment with a beef version.

I love the little flower arrangement that you did in the center for a garnish with the sliced avocado! It is always fun to play around with different shapes and colors in a dish. They always say that you eat with your eyes first, and then the mouth! The recipe can easily be customized to your own tastes.

I didn't know chicken enchiladas could be made on the stovetop. Chicken enchiladas are my favorite dish to order at Mexican restaurants. This version is so much easier than filling the tortillas, rolling them up, covering them, and baking them. We will love this dinner with chips and salsa and guacamole.
