Bacon Sage Soda Bread Stuffing
Bacon Sage Soda Bread Stuffing is an original recipe for stuffing from the Uptown Soda Bread Company. You can use either their Bacon Sage or Rosemary Soda Bread. make this for your next Thanksgiving feast or enjoy it with a nice chicken entree.

Ingredients
- 1 stick butter
- 1/2 cup onion, chopped
- 1/4 cup celery, chopped
- 1 teaspoon parsley, chopped (optional)
- pinch of thyme
- pinch of poultry seasoning
- 1 to 2 Bacon Sage or Rosemary Soda Breads
- 4 ounces chicken or turkey stock
- salt, to taste
- pepper, to taste
Instructions

Preheat oven to 350 degrees F. Butter the casserole dish.

Cube the Soda Bread and place in a large bowl.

Melt a stick of butter in a large pan. Add the chopped onions and celery. Cook over low heat for 5 to 10 minutes or until they’re translucent. Add the chopped parsley (optional) and the pinches of thyme and poultry seasoning. Add the stock to the pan and allow to mix and heat thoroughly.

Pour the entire mixture over the bread cubes, stirring and tossing to distribute the liquid. Add salt and pepper to taste. At this point you can add more stock if you prefer, just don’t make it too soggy.

Press the mixture down slightly in the casserole dish. Cover with foil and bake for 20 minutes. Then, uncover the dish and bake another 20 minutes.
