If you haven't learned to love kale yet, this recipe will make you a believer. It is absolutely delicious. I left out the salt, used whole milk, substituted shiitake mushrooms -- because I live in the boondocks -- and I used grapeseed oil. Other than those minor adjustments, everything was as called for. This dish is going on my "Make Often" list.

This is delicious! I loved this casserole. And it was super easy to cook. The kids actually enjoyed it, too. The only thing I changed was add half spinach/half kale. My boys love spinach, so I just added some of that to the recipe. It was delicious. It wasn't a dump and go recipe, but it was very easy and completely worth the time to make it. I plan on cooking this again!

I usually just make kale chips when I buy kale. I'll have to try using it in something else. This looks like a good recipe to start with!
