I love this recipe! It's like really good potato skins, only in a casserole dish. Easy to prepare and cook, and I'm sure it will become a favorite go-to dish for any sort of potluck dinner. The addition of the thousand island dressing really gives it a slightly different and pleasing taste.

Hi Jim, this recipe makes 6-8 servings. If you'd like to serve 55 people, you will have to multiply it by nine. Hope they enjoy it!
