Slow Cooker Scalloped Potatoes and Ham
Slow Cooker Scalloped Potatoes and Ham is a comforting recipe that everyone will love. Sliced potatoes are mixed with a homemade cream sauce, cubed ham, and canned corn, so this is an all-in-one meal. This is a great meal to start in the morning, because it will be done cooking by the time you get home. After the casserole has cooked for 8 hours, just sprinkle the top with extra cheese and serve! If you have some leftover ham in the freezer, this is a great way to use it up.

This is a very budget friendly dinner solution with great results! I used frozen super sweet corn for this, since I prefer the flavor over the canned, but frozen peas or even broccoli florets would be really nice things to add. I really appreciate the from scratch cheese sauce, as it is so flavorful yet much lower in salt than that canned condensed soup.
