I like how easy this baked ziti recipe is, and I like how inexpensive it is. You can use fresh spinach and mushrooms, then add other veggies that your family likes. We are quite the pasta family, so I will make it and serve it with salad and garlic bread.

I love this vegetarian twist on baked ziti! It has all the wonderful cheese and veggie flavors of a vegetable lasagna, but with a fraction of the prep time and effort required. I make a great tomato, carrot, anion and garlic homemade pasta sauce whenever my garden yields an abundance of roma tomatoes, and I think it would be awesome in this recipe!
