BeckySue, I like your take on this recipe, I was thinking similar things. I love the recipe because who doesn't like some meatballs. I love the use of hashbrowns instead of pasta or mashed potatoes in this dish. It gives it a different texture. Thank you both for the ideas!

This is a good meatball recipe, but be careful you don't overcook the meatballs or they will be dry since they're so small. I think you could loosely layer your meat mixture on top of the hash browns, leaving space so hash browns get crispy, think o f toppings on a pizza. Then lightly sprinkle with cheese on top. I know I changed the recipe, but recipes are meant to be adaptable and give you ideas! Right?
