Texas Cottage Pie
This Texas Cottage Pie is a Texas take on a British cottage pie recipe. The ground beef is seasoned with Tex-Mex spices. Black beans, corn, and tomatoes replace the traditional peas and carrots. Finally, the mashed potato topping is kicked up a notch with spicy pepper jack cheese. This version really captures the essence of Texas throughout the whole dish. Everyone will be pleased with this zesty update on traditional shepherd's pie. Make this recipe for Texas Cottage Pie the next time you are craving some Tex-Mex flavor.

Another recipe that looks and sounds delicious. I grew up eating Shepherd's pie and I do know the difference. It was a "leftover" dish since we used left over mashed potatoes and meat. Now it is so popular that you see it in restaurants which used to make my mom laugh. Leftover dish or not, I still love it. It is comfort food to me. The addition of the spices and black beans really sound good. All that protein and it fills you up. You can't ask for more. Thanks.

I have to agree with BeckySue that this seems like a Mexican version of Shepard's pie, but that is what makes it so interesting. This is an excellent way to add some flavor to dinner. You used awesome ingredients like the pepper-jack cheese and smoked paprika to give this dish a spicy kick. The cumin adds another layer that just makes the dish spectacular. Great choices!

This reminds me of shepherd's pie, only a Mexican version. Nothing wrong with a little spice and heat! I would serve this with salsa and sour cream and sliced green onions.
