I know rotel and cheese make a big hit in my house, so when I seen those two ingredients, I knew immediately that this recipe has to go on the list for next week. I am a little surprised and hesitant about the mayo, but I am willing to try it and see how it turns out.

The Cattle Drive Casserole was a big hit with my family. It is a satisfying meal on a cool fall day! Just a little bit of kick, but that is easily modified if it seems too much. This family does not appreciate spicy-hot and no one complained. They all just said "This is awesome!"
