Baked Tex-Mex Pasta
Baked Tex-Mex Pasta features great flavor and offers a great twist to the typical ground beef and pasta casserole. A combination of black beans and corn makes this dish extra filling and also gives it great flavor and texture. The ground beef is browned on the stove with bell peppers and onion and is then combined with tomato sauce to make a hearty base for the casserole. The cooked pasta, black beans, and corn are tossed with the sauce and the entire thing gets a layer of cheese and finishes baking in the oven. Serve this pasta bake up with sour cream, guacamole, or salsa for a truly delicious meal.

Can you use another bean type in this recipe? I like white beans mainly, but the black ones are just not the texture I like. I will eat pinto beans, but I am not sure how much it would change the recipe. Do you think another bean would still keep the main flavor profile?
