Easy Sweet Potato Casserole
Easy Sweet Potato Casserole is a nice recipe to have in your back pocket. When the holidays roll around, this side dish will fit right in. Crushed graham crackers are sprinkled over the top of the casserole, and on top of THAT is a layer of marshmallows. You can use any size, but jumbo marshmallows make the dish a little bit more fun. This sweet potato casserole is just the thing to bring to your family's Thanksgiving get-together.
Ingredients
- 2 pounds sweet potatoes
- 1 cup sugar
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground ginger
- 3/4 cup evaporated milk
- 1 teaspoon vanilla extract
- 3 medium-sized eggs
- 1/2 cup butter, melted
- 1 cup graham cracker crumbs
- 2 cups marshmallows
Instructions

Rinse sweet potatoes, then place in a large pot. Pour in enough water to cover the sweet potatoes, then boil the sweet potatoes until they are tender.

Remove the sweet potatoes from the pot, and let them cool down. Once the potatoes have cooled, peel the skin off of them. Place the sweet potatoes in a large bowl, then mash the potatoes.

Preheat the oven to 350 degrees F.

Add cinnamon, ginger, sugar, evaporated milk, eggs, butter, and vanilla to the bowl. Mix everything using a handheld mixer.

Pour the sweet potato mixture into a large baking dish.

Sprinkle the graham cracker crumbs on top of the casserole. Then, place the casserole in the oven, uncovered. Bake for 35 minutes.

Remove the casserole from the oven, then place the marshmallows on top. Bake for another 10 minutes. Let the casserole stand for 10 minutes before serving.
