Forgotten Chicken
This Forgotten Chicken is such an easy chicken casserole recipe that you can just throw it in the oven and forget about it. At its core, it's just oven-baked chicken and rice. Once you add in zesty flavors, though, it takes on a whole new and tasty identity. It only takes six ingredients to make, including chicken, minute rice, onion soup mix, cream of celery soup, cream of chicken soup, and chicken stock. Chances are, you'll have all of these ingredients on hand and none of them require pre-cooking. This would be a good weeknight dinner because you can do household tasks while it's baking in the oven.

Ingredients
- 2 cups instant rice, white or brown
- 1 can cream of chicken soup
- 1 can cream of celery soup
- 2 cups water
- 6 boneless, skinless chicken breasts
- 1 package onion soup mix
Instructions

Preheat the oven to 350 degrees F. Spray a 9 x 13-inch casserole dish.

In a medium bowl, mix the rice with both cans of soup and the water. Spoon into the bottom of the casserole dish and lay the chicken breasts on top in a single layer. Sprinkle the dry soup mix on top and cover dish with foil. Set the casserole on a rimmed baking pan if the dish is very full and seems like it might bubble up over the sides.

Bake for 90 minutes; remove the foil and check to see that the chicken is cooked through. If the chicken breasts are large, it may require a few more minutes, uncovered.

A flavorful and very easy recipe! I doubled the rice, canned soups and water for my family and it gave us a nice bed of rice to extend the chicken (for a family of 7).

A bit too cream of chicken soup-y for me. The rice mixture was enjoyable, but it was just too... creamy and slightly salty for me. It tasted like something my mom would make, but not necessarily something I'd think to make.

This casserole was ok, but I may add some veggies next time to make it heartier.
