    The Cheddar Chicken Salad Casserole is an easy but delicious hot chicken salad. This unique chicken casserole is an intoxicating blend of chicken and rice combined with hard-boiled eggs and Cheddar cheese.     Cooking Vessel Size3-quart baking dish

    Ingredients

    • 3 cups chopped cooked chicken
    • 1 cup cooked rice
    • 3 hard-cooked eggs, chopped
    • 1 tablespoon chopped onions
    • 1 tablespoon lemon juice
    • 1 can Campbell's Condensed Cream of Chicken Soup
    • 3/4 cup mayonnaise
    • 1 cup grated Cheddar cheese
    • Ground black pepper

    Instructions

    1. Heat the oven to 350 degrees F. Stir the chicken, rice, eggs and onion in a medium bowl. Stir in the lemon juice, soup, mayonnaise and cheese. Season with black pepper. Spoon the chicken mixture into a 3-quart shallow baking dish.

    2. Bake for 45 minutes or until the mixture is hot and bubbling.

    This is a great dump and make recipe. We enjoyed this very much as a quick week night meal. After a long day at work, it was nice to come home, throw this in, and enjoy a hot meal. I used a quick rice that I made in the microwave, and this came out perfect. We all really enjoyed all of the flavors that were in this dish. I just can't believe how easy it was to make! I will definitely be making again.

    The only issue here is, What size can of cream of mushroom soup. The Small 10.5oz can or the big family size can?

    The normal 10.5 oz can is needed for this recipe. Happy cooking!

    This sounds good. The only change I would make is to add a cup of mixed veggies.

    Need a recipe like this that serves 12 or more! Any help??

    Just triple it.
