This recipe does seem a little odd, but when you are trying to utilize peak season ripe fruits, it makes sense. It is kind of like a peach or an apple cobbler, but using pineapple instead! It would be great with a little crme fraiche drizzled over the top or with a scoop of vanilla ice cream! (or frozen yogurt)
