Ingredients
- 1/2 pound rotini pasta
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 1 green pepper, cored, seeded, and chopped
- 2 pounds lean ground beef
- 1 tablespoon cumin
- 1 teaspoon Herbs de Provence
- 1 (15-ounce) can diced fire-roasted tomatoes
- 1 cup frozen corn, thawed
- 1/2 cup chicken broth
- 1/4 cup sour cream
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 cup grated sharp Cheddar cheese
- Topping
- 1/4 cup grated sharp Cheddar cheese
- 1/4 cup panko breadcrumbs
- 1 tablespoon melted butter

Instructions

Heat oven to 350 degrees F.

Cook pasta according to package directions, drain and set aside.

In a large oven-proof skillet, heat olive oil over medium heat. Saute the onions and green peppers for 1-2 minutes. Mix in the ground beef, breaking up the meat as it cooks. Cook until meat is no longer pink.

Stir in the cumin and Herbs de Provence. Add the tomatoes and corn. Turn off the heat and add in the cooked pasta, broth, sour cream, salt and pepper. Stir in the Cheddar cheese.

Place the skillet into the oven and bake for 15-20 minutes.

Combine the panko bread crumbs with the melted butter.

Sprinkle the Cheddar cheese over the top of the casserole, then sprinkle the panko breadcrumb mixture over the cheese.

Return to oven until the top is golden and the cheese is melted.

I liked this casserole and the blend of flavors, and a little was very filling. But, I prefer spicy food, so I would add hot sauce or some extra seasoning.

This could have used a bit more seasoning, but overall I enjoyed the mix of hamburger and pasta in one dish. It was very filling!

I thought this casserole was a little bland, but I think it'd be the perfect dinner for kids that are picky eaters. It was very filling and the hamburger meat, cheese, and pasta was a nice mix.
