This is a really interesting mix of ingredients and tastes. It's got a hint of Thai cooking if you use the coconut oil and milk, though substitutes for both are mentioned in the comments. My wife and I will occasionally try vegetarian dishes, but something like this calls out for the addition of a bit of ground beef along with the black beans. Yes, I know it's not as healthy as the original, but we're dyed-in-the-wool carnivores.
