We watch a lot of sports at my house and I am always looking for new recipes to serve on game day. These Mini Mexican Enchilada Casseroles are absolutely perfect, to fit the bill. Love that they can be made with chicken or beef for a little variety. I served them with Doritos and Tostitos Salsa and Queso dip on the side.

These are adorable! They would work so well when we're hosting college students or for a Christmas open house. I love it that the blogger has hot links to the food items. Although at first I thought she had looked in my pantry because I believe I have everything except the small tortillas already right there! How efficient and fun!
