I'm always looking for good recipes with a Mexican flavor (since I love Mexican food, anyway) and this looks like a quick and tasty dish to make. Besides the ingredients listed, I think adding some Mexican-style corn would also be good. I'd also add more cheese to the top before baking. Just a quarter cup of cheese seems like it would be a bit on the skimpy side. Some shredded pepper jack cheese sprinkled on top would also be great.
