This was extra specially good! We mostly follow a low carb diet so this recipe blew that one right out of the water, lol! Our enchilada sauce was made by a friend and we added chopped fresh garlic and a chopped red pepper = both growing abundantly in our garden. It was tasty, had some 'heat' and was very good to eat!

This sounds like a super supper. My family and I love Mexican food and I know this one will be another winner. I also recommend jiffy corn muffin / bread mix. I have used it many times. The only thing I do differently than the instructions on the box is to add some sugar or either I use half a box or corn muffin mix and half a box of cake mix.
