This is similar to a pumpkin bar recipe I've made with a graham cracker crust. The cookie crumbles crust sounds perfect. I never use pumpkin pie spice, but I use organic cinnamon and fresh ground nutmeg instead. I've also fallen in love with vanilla bean paste and I substitute it for vanilla extract in everything. It's quite pure with strong flavor, so I usually reduce the amount of paste used compared to extract. Pumpkin harvest time is nearly here and I can't wait to try this with fresh pumpkin.
