Woohoo! This casserole is so delicious, and the most important thing is, its super easy and can be made the night before. Great option for busy morning. My whole family loves it, the kids always try to steal some as soon as the casserole is ready (be careful, its still hot, Boys!). They cant wait till morning!

My family absolutely loved this breakfast casserole the first time I made it, so I make it quite often at home. I always make this and some make ahead French toast for Christmas morning. It is very colorful and loaded with flavor. It always goes quickly whenever we have a holiday brunch, but is simple enough to become a weekend staple.
