I would serve these enchiladas for breakfast, lunch, or dinner in my house! It is such a creative and surprising twist on the traditional ground beef or chicken enchiladas that I often serve. My picky son loves tater tots, ham, and cheese, so I'm sure these are going to be a big hit. I love it!
