Alfredo is low carb if you make the sauce right and serve it over shrimp or chicken. My low carb alfredo sauce recipe is: 1 stick butter, cut into 1/2" cubes 1 large package of cream cheese, cubed 1/2 cup freshly grated Parmesan cheese 1/2 cup heavy cream garlic powder to taste white pepper to taste Put all ingredients in a microwave safe bowl. Nuke for 1-2 minutes. Stir well with a fork or whisk. Nuke in 45-second increments after that, until you can whisk it together into a smooth sauce. Serve over chicken or shrimp, with low-carb salad or veggies on the side.
