I have a five year old boy who refuses to eat vegetables. (If it looks like them.) But he loves mac and cheese. I tried mixing broccoli into it before, but he spotted it. I tried cauliflower, chopped in tiny bits with my food processor, and added it to the last minute of pasta boiling. Great success! This is a great way to sneak in a veggie, and I kind of like the little bit of a sweet element that the corn brings to the salty cheese!
