This Hasselback Garlic Potato Casserole sounds so good I can't wait to make it. I know what's for dinner tonight!! I wonder if you can just put raw bacon chunks on top and let it bake? The added bacon fat would add a great flavor to the potatoes. I also like Edmund K's idea below of using unpeeled potatoes, no need to wast the great tasting skins.. Thank you for sharing this great recipe.

I really like this recipe. Reading it made me want to crack out the mandolin, grab some potatoes, and go to town. I would definitely sprinkle some bacon on top, as well as adding some cheddar. Has anyone tried this out with unpeeled potatoes? I've always liked the natural cut fries at various restaurants and think it would work well with this.

What a good idea for a casserole! I have a weakness for potato dishes, especially for the holidays, so this is going on my "yes, please" list.
