Cheesy Zucchini and Potato Casserole

Zucchini aren't often paired with potatoes, but when they are, it's delicious. Cheesy Zucchini and Potato Casserole is a fantastic cheesy potato casserole than has one secret ingredient: zucchini. Topped with breadcrumbs, this vegetable side dish is both creamy and crunchy. It makes a great summer potluck recipe because it's easy to make, it tastes great, and it's a bit healthier than a typical potato casserole because of the additional zucchini.
