Ingredients
- 2 tablespoons canola oil
- 1 cup diced onion
- 1 cup diced bell pepper
- 1 (32-ounce) bag frozen Southern-style hash brown potatoes
- 1/4 teaspoon salt
- 1 2/3 cup 1% or 2% milk
- 1 tablespoon flour
- 2/3 cup light sour cream
- 4 ounces grated sharp Cheddar cheese
- 3 cups corn flakes
- 2 tablespoons melted butter
Instructions

Preheat the oven to 350 degrees F.

Heat a large skillet over medium-high heat. Add the canola oil.

Add the onion and pepper. Saute until soft.

Add the frozen potatoes.

Cook until the potatoes start to brown, about 10 minutes.

Combine the flour and milk and add to the potato mixture. Cook until bubbly.

Add the sour cream and cheese.

Pour into the prepared casserole dish.

Combine the corn flakes and butter. Spread evenly over the potato mixture.
