This recipe is very easy and quick to make. It's a good way to use up leftover mashed potatoes. I added crumbled crispy bacon in the cheese layer and put a layer of crispy-fried onions on top. If you don't want to fry the onions yourself you could use some of the packaged onion bits, or even the crispy shoestring potatoes. My husband wants to try it with some sun-dried tomatoes on the cheese layer...sounds good to me.
