As soon as I saw this recipe I knew I wanted to try it So I did and we were pleased at the taste of it First of all I liked that this recipe can be prepared without any set amount of ingredients Since we were two people eating this dish I used a very small round casserole dish for it which was just right for two portions As I was preparing it the first thought that occured to me was that no spices were listed on the ingredients list I cook a lot of meals with tomatoes and zucchini and am used to using thyme and oregano being used for them What I liked about this dish without any added spices was that you really taste the pure flavor of the vegetables The tomatoes and zucchini combined with the onion were just right and the cheddar cheese between the layers…Read More and on top did the rest

This recipe includes everything I love in a meal... zucchini, tomatoes and cheese! Since I am vegetarian, I am always on the lookout for hearty dishes with these ingredients and this one really looks like one I will be making very soon. Thanks for sharing!

I love the savory and comforting flavor that comes when you combine fresh zucchini with good tomatoes! I don't even miss the meat in this recipe - it is perfect for "meatless Mondays" or if you just want to take advantage of the freshness of the summer season! I grow zucchini in my backyard garden that get so big that they are the size of my forearm, and they all are pick - ready all at once. This is a great way to use them up!
