So delicious and satisfying. The flavors are a bit different from the typical meat-and-potatoes American casseroles. Definitely use coconut oil (so you don't get a scorch from olive oil) and try to find the spices mentioned. Look online if you can't find them locally. I served this with some homemade oatmeal dinner rolls and fresh-fruity dessert.
