Simple Baked Meatballs with Rice
Simple Baked Meatballs with Rice is an easy supper that doesn't require much effort. The meatballs don't even have to be premade! Once the meatballs are shaped, drop them on top of the rice mixture that is already in a casserole dish (did we mention you don't have to pre-cook the rice either!). The casserole needs to bake for about an hour, but a majority of that time is hands off, so you can throw in a load of laundry, take out the garbage, or read a magazine.

We've done chicken and rice dishes before where everything is cooked at once, but I was unfamiliar with doing something similar with meatballs. I agree that this would be a nice slow cooker dish, though you might need to use brown or wild rice to make sure it doesn't become something closer to risotto than rice. I like the idea of using the homemade meatballs rather than the store-bought pre-cooked ones, but I could see using those in a pinch as well.
