I like easy casseroles and I like that this recipe gives you options of a quick recipe, or a more "from scratch" version. I will try the quick version first, to make for a weeknight meal. It looks like a meal my family would enjoy with a fresh loaf of bread.

I made this today and it was just okay. It's definitely a circa '60s-'70s recipe. The rice did cook in the 90 minutes which is what I always fear about putting raw rice in a casserole. If I make again, I'll probably use a topping of Parmesan cheese and no vegetables for an updated taste.
