I love to change things up a bit by substituting thinly sliced veggies for pasta. I like this recipe since you don't need any fancy peeling equipment or knife skills to get them "paper thin". 1/4" slices will do just fine. Much lower in carbs than a traditional lasagna, but still super cheesy and hearty. I will soon be making this again!

I have heard of using zucchini slices instead of traditional lasagna noodles, and I've always wanted to try it! I will have to keep this recipe in mind for my next lasagna night.
