Rice Ball Casserole
This Sicilian rice ball casserole is inspired by the Italian appetizer, arancini.
Italian rice balls, or Arancini, are an Italian appetizer made with rice, meat, and peas. Normally, they are breaded and deep fried. Rice Ball Casserole is a healthier version of that. It uses the same ingredients, but there's no frying involved. Instead, everything's mixed together and put in a casserole dish. This particular casserole with rice is indeed a treat, so give it a try. Bring it to your next potluck and watch as everybody oohs and aahs. Plus, this recipe freezes very well!
