I really like that you used fresh zuchinni in this recipe because I think we all need to sneak in some extra fresh veggies everywhere we can. The dish is an excellent way to get something tasty on the table and something healthy too. Can you prepare this ahead of time and refrigerate until you are ready or does it have to be served fresh because of the zucchini?
