High-Class Shepherd's Pie

I have been making Shepherd's Pie for decades and it is definitely one of my go to meals, especially in the winter. Technically, a shepherd's pie made with beef is actually called a Cottage Pie. The only shepherd's pie is made with lamb, so I guess this recipe should be changed to Cottage Pie. -)
