Colombian Catfish and Potato Bake
Catfish might seem like an unusual addition to a casserole, but this Colombian Catfish and Potato Bake is completely delicious. Fillets of catfish are layered with sliced potatoes, bread crumbs, and Parmesan cheese. A savory sauce made from heavy cream, garlic, and onions, is poured over each layer in this casserole. The light cream sauce ties the flavors of the fish and the potatoes together. This casserole is made in four individual baking dishes, so each person gets their own casserole! If catfish isn't available in your area, feel free to substitute another type of white fish or even shrimp.
