Are you sure about the measurements in this one? It says five cups of cheese total for 8 to 10 enchiladas. I just stuck with a total of three - 2 cups pepper jack and 1 cup of Monterey jack mixed together. But I have to admit, the spicy sweet honey lime marinade is amazing and does wonders for the chicken. It's worth checking out the recipe for this, since it could also be used for cooking steaks or pork chops on the grill!

Hi kmcartoonity, I agree that 5 cups of cheese seems like quite a bit. I checked the ingredient list and it calls for 3 cups of shredded pepper jack cheese with the option to add in 2 cups of shredded Monterey jack cheese for those that like extra cheese.
