Mexican Stuffed Peppers

I just learned how to make stuffed peppers myself recently and I *love* Mexican food so this is probably an amazing combo!

I've always liked Sabrina's recipes, and this one is no exception. My parents used to make stuffed peppers quite a lot when I was growing up, and green peppers have continued to be one of my favorite vegetables. This is a wonderfully simple dish to assemble and I know I'll be giving it a tryout soon. I appreciate the fact she discusses several techniques for preparing the peppers so everything cooks simultaneously, though I certainly don't mind if the green pepper still has some crunch to it.
