Chicken Enchilada and Rice Bake
This Chicken Enchilada and Rice Bake is not your average chicken enchilada casserole. This recipe uses a base of cilantro-lime rice instead of plain white rice, which gives it extra flavor. This casserole also incorporates a layer of black beans and corn, and a layer of a chicken enchilada mix, made with tender-pulled chicken, green enchilada sauce, diced tomatoes with green chiles, spices and a bit of Greek yogurt for creaminess.
