Wow, this sounds so good! I can't wait to make it for my family and see what they think about it too. Do you think it would hurt anything to use applesauce for the oil in the cake? I think it would go real well in this case. My mother-in-law uses it all the time to make the cake a little healthier. She adds fruit and then the juice for the oil or applesauce.
