I have to agree with msdeb21 that this sounds so good and yummy. Do you ever use maraschino cherries in your recipe? I think they would add another dimension of flavor that would go really well with this cake. It would almost be like a pineapple right side up cake.

This cake looks DELICIOUS! I love pineapple and coconut and poke cakes are wonderfully moist, so I have no doubt this will be amazing. My family doesn't like coconut so I just have to find an excuse to make this cake and take it to some family or work get-together.
