- 1/4 cup chopped onion
- 1 teaspoon Herbs de Provence
- 1 teaspoon pepper
- 2 teaspoons minced garlic
- 1 cup cream of chicken soup (Campbell's Healthy Request)
- 4 cups cooked and shredded boneless skinless chicken breast
- 2 cups cooked long grain brown rice
- 1 (12-ounce) package frozen broccoli, defrosted
- 6 ounces shredded reduced-fat Cheddar cheese
- 1/2 cup panko breadcrumbs
- 2 tablespoons grated Parmesan cheese
- Drizzle of olive oil

Instructions

Heat oven to 350 degrees F. Lightly grease a 3-quart baking dish.

In a large bowl combine the onion, Herbs de Provence, pepper, garlic and soup.

Add in the cooked chicken, rice and broccoli and mix well.

Spread into the baking dish. Top with shredded Cheddar cheese.

In a small bowl combine the panko with the Parmesan cheese.

Sprinkle over the cheddar and drizzle with a bit of olive oil.

Bake for 30-35 minutes until casserole is heated through and the cheese is melted.

I think this is a great recipe, especially for the winter months. I have made something similar using sour cream instead of the cream of chicken soup, and you can also spice it up a bit with some chili flakes. My husband loves anything spicy! One question, though... the recipe calls for one cup of cream of chicken soup (canned). Since the average tin of soup is more than one cup, what do you suggest we do with the remainder in the tin? It isn't enough for a serving as a soup. Any ideas? I hate to just throw it out.

I LOVED the cheese and broccoli - next time I'd season the chicken a bit more or add another flavor to this (Sriracha might be a good call!), but this was delish!!

The chicken was really soft, which I think is important for a casserole, and there was just enough flavor to make this a comfort go-to dish.

I was shocked by how much I enjoyed this casserole. The cheesy crust had a light crunch that worked wonderfully with the chicken and broccoli combo!
