I love this recipe because it does not rely on the canned soup! I prefer a high-flashpoint oil like sesame or grapeseed to olive oil, which smokes easily at frying temps. And since I have plenty of onions from the garden and no shallots, I use all onions. I also think "they" now say that regular whole milk is healthier than skim, and I think it makes a creamier roux. I like to crisp some bacon and add the crumbles to the roux with the mushrooms.
