Orange Chicken Chinese Casserole
You can turn almost anything into a casserole. In this particular case, it's orange chicken. Orange Chicken Chinese Casserole uses a lot of shortcuts, so it is really simple to make but has a restaurant-quality taste. Using a bottle of ready-made orange sauce is super helpful so you don't have to worry about making a sauce from scratch. Another shortcut is using a can of mixed Asian vegetables. This way, you don't have to buy seven different veggies and spend time chopping them up. This Chinese casserole will be a big hit.

Ingredients
- 1 package chicken breasts with rib meat (about 10 small pieces)
- 2 eggs
- 3/4 cup flour
- 1 (14-ounce) package rice noodles
- 1 (28-ounce) can Asian stir-fry vegetables (or an array of your favorite Asian vegetables)
- 1 (20.75-ounce) bottle of orange sauce
Instructions

Preheat oven to 350 degrees F.

Cube chicken into 1 1/2 inch pieces. Beat two eggs in a small bowl. Pour flour into another small bowl. Dip each piece of chicken in the egg and then the flour. Place on baking sheet.

Bake chicken for 25 to 30 minutes. Turn them over after 15 minutes.

While the chicken is baking, cook noodles according to package directions. After you drain the noodles pour them into a 9 x 13 inch casserole dish. Pour the vegetables over the noodles. Pour 1 1/2 cups of the orange sauce. Mix.

When the chicken is done baking, add to noodle mixture. Pour another cup of orange sauce over the chicken and mix. Add more sauce to taste.

Optional: Bake for 5 minutes.

I always keep a bottle of prepared orange sauce in my pantry. It is great for quick and tasty weeknight meals like this one. It is also great to use as a dipping sauce for egg rolls, chicken tenders, or crab rangoons! I added quite a bit of red pepper flakes to this dish, since when we order takeout we always order it extra spicy!
