Recipes for Cobblers
When days become longer, you know it's cobbler season. Cobblers were big in the past and are big today. Why? Because they take your favorite seasonal fruit and put it into a comforting cake-like dessert. With every bite, you get a nice dose of juicy fruit and a warm piece of crust. Whether you plop the batter on top of the fruit layer or cover it evenly, the result is undeniably delicious. The first chapter of this free eCookbook, Fresh, Fruity, and Fabulous Fruit Recipes: 25 Summer Desserts with Fruit, showcases nine different recipes for cobblers. We begin with a classic Brandied Georgia Peach Cobbler (p. 7, pictured). Juicy, ripe peach slices make up the bottom fruit layer while drops of sugar cookie-like dough cover the top. It will be hot and bubbly after 40 minutes in the oven, and will look incredible. You'll have a hard time resisting this one. Another great cobbler to try is Blackberry Cobbler (p. 11). This cobbler is a little different in that just before putting it in the oven, you pour boiling water on top of it. This may sound wacky, but by doing this, the cobbler will come out of the oven with a shiny top coat, making it look even more enticing. Recipes for Cakes, Crisps, and Crumbles
When you're enjoying a nice summer day, there are few things that could make it better. One of those things is a nice piece of a crisp or crumble. Can't you just picture yourself sitting on your porch, looking out at the bright sky with a plate of summer fruit crisp in your hands? That sounds delightful. This chapter of Fresh, Fruity, and Fabulous Fruit Recipes: 25 Summer Desserts with Fruit includes a crisp, crumble, cake, and cake bars. Each one uses a different fruit (or different fruit combination), so you won't get bored with the same thing. Let's start with the Peach Raspberry Almond Crumble (p. 19). The sweet fruit filling is a real treat, and the buttery, crumbly topping makes it even better. Don't forget to add a scoop of vanilla ice cream! The coolness provides a nice contrast to the warm crumble, which your taste buds will love. Another recipe that you don't want to miss is Blueberry Cake Bars (p. 16, pictured). They are made up of layers of yellow cake, blueberries and cinnamon sugar, and a brown sugar and oat crumble. This is a fun blueberry dessert to bring to your book club or a baby shower. Cheesecake Desserts with Fruit
When you're in the midst of a hot summer and need to find a way to cool off, the most delicious way to accomplish this is to dig in to a big slice of cheesecake. It's cool, it's creamy; what's not to love? You'll never want plain cheesecake ever again after taking a look at these outstanding fruity cheesecakes. We have cheesecake bars with raspberries, key limes, cherries, and more. The question is, "where to begin?" Let's start with the first one of the chapter: Key Lime Cheesecake Bars (p. 20). A graham cracker crust acts as the base to a dreamy cheesecake filling. Use green food coloring to make the top layer of cheesecake make a bold statement. It will help make them look even more irresistible. Dreamy Raspberry Cheesecake Bars (p. 21, pictured) are another can't-miss recipe. A coconut macaroon crust forms the base and mashed raspberries are swirled into the cheesecake filling. The red and white colors will draw you in and the creamy texture and flavors will make you stay. Bring these bars to a party and you'll be asked to come back again and again. Recipes with Cherry
Cherries are a great addition to any dessert. They have a unique flavor that adds a nice touch to an after-dinner treat. The five cherry desserts in this chapter of Fresh, Fruity, and Fabulous Fruit Recipes: 25 Summer Desserts with Fruit are all very different from one another, so you're bound to find something you like. To start with, there's Cherry Pineapple Dump Cake (p. 26). This dessert could not be simpler to make. Just dump the five ingredients in a casserole dish and bake. You don't even have to mix them! Really, does it get any easier than that? For something a bit more complex, but easy all the same, try Chocolate Chip and Cherry Blondies (p. 28, pictured). The cherries and chocolate go well together, as you'll discover after taking your first bite. So, if you're the type of person who says something's not a dessert if it doesn't have chocolate in it, then this recipe is for you. I would have given this five stars, if it weren't for the problem on page 20, "Key Lime Cheesecake Bars." In the second paragraph of direction #2, two of the lines are piled upon each other, making it unreadable. Could you please correct this and send me a replacement page? Thanks. one8thnote@gmail.com

Thanks for your comment. It is showing up normally in the PDF document. If you are looking at a version you printed out, please make sure that your printer settings are set to print the eCookbook with the pages at 100 percent. Here is step 2 for the Key Lime Cheesecake Bars Preheat the oven to 325 degrees F. Line a 10 by 10 inch pan with parchment that overhangs the edges. Mix the butter and graham crackers together and press into the bottom of the pan evenly. Bake the crust for 5 minutes and allow to cool completely. Sorry about any inconvenience, but hopefully this helps!
